I LOVE granola and have a lifelong quest to make the perfect one (not too sweet, healthy, and, crucially, clustered not gritty). I've never tried it with tahini though - inspired!

Oh yes to this!! Clustered and crunchy, not gritty! I'm making another batch, as we speak for the granola exchange, and realizing that some people would want it slightly more sweet (for people who don't drizzle their granola bowls with extra honey, but need that sweetness). If you try it, I'm so eager to hear what you think!

The tahini adds an earthiness and helps with nice clumping. Peanut or almond butter would also work. 🤍

Oooh, I can't wait to try yours!! The last batch I made I didn't stir in the tahini very well, and there were amazing clumbs of tahini, almost like halva, which were so delicious. I think I may do it that way from now on!! ❤️

I made it! I omitted the poppyseed because I have people in my life that get drug-tested for their job, and theres a potential for a trigger, so added ground flax seed instead. Also, there's an addition of soaked dried cherries(they dry out, but don't burn this way) and a pinch of Aleppo pepper to add a sweetheat element. The granola is still cooling, but I can't stop eating it. Thanks for the inspiration <3

I’m a granola fanatic. I have this in the oven now. I was going to substitute olive oil for the butter, but decided to stick with the recipe (mostly) for the first try. I did, however, substitute my chai spice mix for the spices in the recipe. I made a blend for the last granola I baked and want to use it up. The kitchen smells heavenly and I cannot wait for it to be done. I desperately want that Salty Coconut Pumpkin Seed Granola that was mentioned above… I’ve got to figure that one out!

Yes!! Very often I use half olive oil and half butter or 100% olive oil. It works perfectly. I switched to all butter here, reacting to the cost of olive oil lately ($$$!) You'll want to use one with good flavor (because at this amount, you do taste its flavor here) and ideally organic.

I've been using grass-fed butter for this more recently, which is a slightly better price per ounce, but coconut oil also works if you don't mind a mildly coconut flavor.

Wow, that description sounds incredible! I wish you could post a picture here--I'm so curious (visual learner over here!). Are there giant flakes of coconut, or is it more subtle (coconut oil, maybe)? Enjoy your breakfast tomorrow!

The coconut flakes are small flakes and blend right in with the oats and pumpkin seeds. The salty sweet flavor keeps me going back for more! Breakfast tomorrow…I’ve had it for dessert tonight!

Thank you, Dione! Thank you for noticing! I think granola should be subtly sweet and delicious but not dessert, so I always go conservative on sugar/ :) One can always add fresh fruit or honey drizzle when serving if they need a touch more.
