I will be making this bewitching galette as soon as I can. I can't wait, but I became allergic to stone fruits recently, bah humbug! So, I will be making this with apple and pear! I spent today making pumpkin spice challahs. Tiring, but worth it! I have never had sausage gravy; it must be a southern love. All of my relatives were from Europe, and I never had the opportunity to taste that kind of food.

Yes!! It will be wonderful with apple and pear combo. I made two apple-pear galettes this season as well, and I think it's the pear that really gets me. It is so fragrant and tender and works beautifully in combination with another, slightly more tart fruit.

As for sausage gravy, it's a southern food for sure, and really satisfying and wonderful when made correctly. I hope you get a chance to try it in the right hands. Thank you for this note!

Lissa! I will try to weave this in the next month or so! I should do a video of it--I have videos of my Aunt Dorothy teaching me how to make sure I don't make my gravy "slick" from her Memphis kitchen. Sausage gravy is the most satisfying.
