This is the inspiration I needed to use up several bunches of herbs in my fridge that are about to go bad. Thanks! Also, my creamy dressings always have a watery consistency when I mix them in a blender, it sounds like arrowroot powder might be a genius solution?

Yes! I have had arrowroot in the pantry for a bit but only recently started using it to emulsify and thicken dressings like this. A big aha--it's more creamy (like my kid's favorite commercial dressing), without all the junk inside!

Paired the green sauce with roasted chicken. The bomb!! So good. I used arugula, cilantro and chives! Loved it!! Thank you, Sarah.

YES! All hail cilantro for green sauce--it's a power house for flavor, especially in this pairing with arugula and chives. I'm so glad this was a home run for you!

I am just not a parsley fan, especially in large doses. I like it chopped fine as a touch on things for color but that's about it. I love cilantro and had chives in the garden, arugula in the fridge for a salad so it was an easy decision. I will certainly try other combos.

I am all for the sauces, that make every dish special, and for savoring the season.

Even though summer is the heaviest season for me-physically and work-wise-I'm pausing to enjoy this last month, before Livia goes back to school, before our rhythms will change once again.

The late August pause is my favorite. It's not as slow for us this year as it would be if we were in Hungary (where we usually spend August) but I'm working hard not to let the back-to-school worries creep in.
