PS I LOVE this power cups! Unfortunately I have GD, so I have to hold off on a lot of the higher sugar/carb recipes for now, but I think they would make a great postpartum treat! Which reminds me of the granola bars you shared in that same class - would be a great make-at-home snack for my toddler to take into school!
Thank you for the note, Polina. I'm sorry to hear about the GD, but how fortunate that you have the skills and knowledge to work with it. More and more often now, I make the power cups without coconut or oats, and instead use almond flour and sliced almonds to replace them at the same amounts (one day soon, I'll write up and publish that version). This way, they become more protein-forward and lose much of the carb load (you could skip the chocolate or use less). But for sure, bookmark for a postpartum treat! ♡
I can get away with some carbs, as long as it's paired with lots of protein and fiber so the almond flour/sliced almonds are a brilliant idea. Thank you! I'll try it :)
Thank you, Rachel! I'm so glad it's appreciated and useful! I meant to write (as if this isn't long enough) that I feel our culture is too dependent on bars and packaged, seemingly healthy-ish "protein" snacks that are, ultimately, more processed foods. I know it's a privilege to be able to spend the time to make to-go food on the go, but I am surprisingly enjoying it (though, I'm sure it will get old by June, when I throw in the towel and we live on watermelon and cucumbers for the summer).
It is a lot. I'm on the verge of saying no to something, but I see how happy and fulfilled (and calm) these activities make them. No one is fighting bedtime these days (especially not me)!
I love this and want all the meals for me! Saving this for the busy stage of kid life which feels like it’s coming in the next few months. I need to upgrade my primary school kids from coco pops to more nutritious brekkie’s so going to try some of these out. Thank you for the time you spent putting this together Sarah!
Thank you for the note, Perzen! Please let me know how they work for you and your family. I love a savory brekkie too-for me (Japanese style, smoked fish or eggs etc), but I haven't figured out to make them portable yet.
Can’t help with the Japanese style but I can with the eggs! Growing up a fav picnic food in my family was either Wafer per Eedu (eggs cooked with wafers or chips) eaten by itself similar to a frittata situation OR a thin omelette made with caramelised onion, ginger, garlic, excess coriander, pinch of turmeric & green chilli that you stuff between two slices of bread.
The latter is often now my breakfast on the go. I make my bread at home and the omelettes on a Sunday, assemble it all and pack individually. Reheat, then toast.
Ooh, I love a frittata or a Spanish tortilla, and now I'm adding Wafer par Eedu to my list. I often make omelets, but I don't think I've ever had eggs with ginger and turmeric. Now it's all I want to eat. Thank you for the inspiration!
The turkey/lamb burger hit the spot—the melty gruyere. Did I mention that was a porcini mustard, from Rosie's General in Kingston. SO good. I want it on everything!
