THE LOW-KEY PRESSURE OF SUMMER'S ABUNDANCE
A no-waste guide to storing, saucing, pickling, preserving and savoring summer's peak produce (without special equipment and tons of free time!).
Hi!!!
Earlier this week, I came to you with My Best Summer Salads, the kind of dreamy dishes I could whip up at a moment’s notice, like
, author of the new (stunning) Bright Cooking. If that’s you right now, bravo.Life is too busy for that here. For starters, my kids are bigger and they eat more—much more (a bag of ripe peaches lasts 38 hours at best). We are constantly on the go, packing coolers for swim meets, campouts, and paddleboard dates at the creek. Also, I no longer have the drive of a hungry cheetah.
One thing hasn’t changed: I’m constantly hunting and gathering the best peak-season produce for my family—so much so that I go a little overboard. You, too?
It starts innocently enough. Feeling floaty and optimistic this week, I brought home a case of fresh blackberries (on sale), plus 4 lbs of organic chicken that I threw right into a marinade (see below). At the farmer’s market, the kids begged me for not just one but two giant melons. The next day, we went cherry-picking, and our plan to fill a 5-pound bucket turned into two (my kids are very persuasive). By mid-week, András left for NYC, leaving me alone in a house with two kids, an overflowing garden, and more food than we could ever eat.
When this happens, my first instinct is to bake (preserve all those berries and cherries in delicious muffins and loaf cakes!) or text friends to see who is free for dinner on me—both of which require plenty of ambition and time.
Plan B: juice it, smoothie it, pickle it and preserve it.
