I’m back with a quick follow-up to my earlier letter about Rachel Simon’s new book, Sesame with a gorgeous spring galette that is very much worthy of a summer birthday, a dinner party, or just a Sunday on the lawn. The initial draw here, of course, is the consummate rhubarb-strawberry companionship that makes most of us swoon this time of year. But the secret weapon that makes this dessert a standout is undoubtedly the halva cream, which I now want to dollop on top of iced coffee, spoon onto my favorite chocolate pot de crème, or serve alongside these poached plums all summer.
For this recipe, the earthiness of the halva beautifully complements the brightness and tart pucker of the roasted rhubarb and strawberries while offering a soft contrast to the crumbly crust. This is brilliant after dinner, naturally, but I love it most of all on a brunch spread or on a spring afternoon, with a side of milky iced coffee. The recipe is below for paid subscribers.
