Hello!

Dear subscribers: I’m excited. This happens with all new things. I want to throw myself at it 1000%. Ideas are spinning wildly. Sometimes I don’t want to wait until next week to send you something new. Sometimes I make something and think—they need to know about this. YOU, dear reader need to know about this.

Like these pancakes.

I made them last weekend in honor of #CookforUkraine, on the fly on Sunday morning. They were quick and they were good—like so good.

Unlike American pancakes, where you merely coat a skillet or griddle with a thin layer of butter or oil, these are essentially shallow fried (in canola oil, but I used olive once too and that worked fine) and therefore puff and crisp feeling somewhere between summer on the Black Sea and American fair food—with apples. They’re akin to Apple Fritters. Or Elephant Ears?

I can’t explain, just make them.
