I will make this short and sweet. Soccer season has started, and we’re pot lucking with friends every night this weekend, so the pace is humming. Temps hit 97 yesterday, we filled our cold plunge pool (like this, serving us since the early pandemic times), and it feels like we are already summering hard.
In keeping with the theme, I’m dropping you the recipe for a to-die-for chocolate skillet cake that reads like a giant molten lava cake, crossed with a fudgy brownie. It’s utterly simple and delivers for potlucks, grill-outs, play dates, and date nights.
As I often do in intimate circles—you can plop the ice cream right on top and serve it with a bunch of spoons. Germaphobes, (I get it, covid rocked us all), serve, and à la mode it (yes, we’re making it a verb, here) in separate bowls.

FLOURLESS CHOCOLATE BROWNIE CAKE
1 cup (2 sticks/225 g) unsalted butter, in pieces
¼ cup (60 ml) heavy cream
7 oz (200 g) bittersweet chocolate, chopped
5 large eggs
1 cup (200 g) sugar
½ cup (40 g) Dutch-processed cocoa powder
¼ tsp fine sea salt
Ice cream, for serving
Preheat the oven to 350°F (180°C). Heat the butter and cream in a medium saucepan over low heat. When the butter is melted, add the chopped chocolate and stir until melted and smooth.
Whisk together the eggs, sugar, cocoa powder, and salt in a separate bowl until a bit frothy, 2 to 3 minutes. Stir in the melted chocolate mixture until smooth.
Transfer to a buttered skillet or cast-iron skillet and bake until just shy of set in the very middle, 3o to 35 minutes. Remove from the oven; let cool slightly and serve warm, with ice cream (plan to scoop, rather than slice each serving).
